Add the sausage slices and cook, stirring occasionally, until browned and slightly crispy on both sides, about 3 minutes. Remove the sausage from the skillet and transfer to a plate lined with paper towels to drain, leaving the flavorful drippings in the pan.

Sauté Vegetables and Apple: Quarter the cooked potatoes. Add the potatoes, red pepper, green pepper, onion, and apple to the skillet with the sausage drippings. Cook, stirring occasionally, until the potatoes are starting to brown and the vegetables are tender-crisp, about 8-10 minutes, adding more olive oil to the pan if needed to prevent sticking. Stir in the minced garlic and cook until fragrant, about 30 seconds.

Combine and Finish: Return the cooked sausage to the skillet. Stir in the frozen peas and dried thyme. Cook until the peas are heated through and everything is well combined, approximately 3-5 minutes. Season generously with salt and freshly ground black pepper to taste. Garnish with chopped fresh parsley, if desired, before serving.

For a vegetarian option, substitute the smoked sausage with plant-based sausage or hearty mushrooms.
Add a pinch of red pepper flakes for a touch of heat.
This dish is excellent served with a dollop of sour cream or Greek yogurt.
Feel free to experiment with different types of apples, such as Honeycrisp or Granny Smith.
