Preheat the oven to 250 degrees F (120 degrees C). Pour red wine into a roasting pan with a lid; set aside. (5 minutes)

Combine paprika, black pepper, garlic salt, parsley, and marjoram in a small bowl. Rub chicken all over with the spice mixture. Place celery and onion into the cavity of the chicken. (15 minutes)

Put the chicken into the prepared roasting pan. Cover the chicken and bake in the preheated oven until no longer pink, and juices run clear, 4 to 5 hours. An instant-read thermometer inserted into the thickest part of the thigh near the bone should read 165 degrees F (74 degrees C). (240-300 minutes)

Remove the chicken from the roasting pan, cover with a doubled sheet of foil, and allow to rest in a warm area for 10 minutes before serving. (10 minutes)

For an even richer flavor, consider adding a few sprigs of fresh rosemary or thyme to the cavity along with the celery and onion.
If you don't have a roasting pan with a lid, you can tightly cover the pan with aluminum foil.
Be sure to let the chicken rest; this allows the juices to redistribute, resulting in a more tender and flavorful bird.
