Follow The Directions

01

Step

Preheat oven to 350 degrees F (175 degrees C). Lightly grease a large casserole dish. (5 minutes)

02

Step

Layer the sliced potatoes, carrots, and onions evenly in the prepared casserole dish. Sprinkle the uncooked rice over the vegetables. (10 minutes)

03

Step

Add the peas (with their liquid) over the rice layer. Arrange the pork sausage evenly on top of the peas. (5 minutes)

04

Step

In a large measuring cup or bowl, dilute the condensed tomato soup with the water. Pour this mixture evenly over the sausage layer, ensuring it seeps down into the other layers. Season generously with salt and freshly ground black pepper. (5 minutes)

05

Step

Cover the casserole dish tightly with a lid or aluminum foil. Bake in the preheated oven for 1 hour. (60 minutes)

06

Step

Remove the cover or foil and continue baking for another hour, or until the vegetables are tender and the sausage is cooked through. The top should be nicely browned. (60 minutes)

07

Step

Let the casserole stand for 10-15 minutes before serving. This allows the flavors to meld together and the layers to set slightly. (15 minutes)

For a richer flavor, consider browning the sausage in a skillet before adding it to the casserole.
Feel free to substitute other vegetables like zucchini, bell peppers, or mushrooms based on your preference.
If you don't have condensed tomato soup, you can use tomato sauce seasoned with a little sugar and herbs.
To prevent the top from browning too quickly, you can cover it loosely with foil during the last 30 minutes of baking.
This casserole is excellent served with a side salad or crusty bread to soak up the delicious sauce.
