Turn sausages and add frozen mushrooms; cook, stirring occasionally, until mushrooms have thawed, about 3 minutes.

Feel free to substitute other vegetables like zucchini, bell peppers, or spinach based on your preference and what's in season.
For a vegetarian option, omit the sausage and add a can of drained and rinsed cannellini beans.
If you don't have quick-cooking farro, regular farro can be used, but will require a longer cooking time. Adjust the amount of broth and cooking time accordingly.
