In a medium bowl, whisk together the flour and salt. Set aside. (5 minutes)

In a large bowl, cream together the sugar and softened butter with an electric mixer until light and fluffy. Beat in the egg, vanilla extract, and almond extract until well combined. Gradually add the flour mixture, beating on low speed until just combined. Be careful not to overmix. (10 minutes)

Divide the dough into 10 equal portions. In separate small bowls, combine 4 portions with red gel food coloring, 3 portions with green, 2 portions with yellow, and the remaining portion with blue. Mix each until the color is evenly distributed. Wrap each colored dough in plastic wrap and refrigerate for 30 minutes to allow the gluten to relax and the colors to deepen. (45 minutes)

Shape the blue dough into an 8-inch log. On a piece of waxed paper, shape the yellow dough into an 8x3-inch rectangle. Place the blue log in the center of the yellow rectangle and fold the yellow edges up and around the blue log, pinching to form a seal. Gently roll to form a smooth log. Next, roll the green dough into an 8x5-inch rectangle. Place the yellow log in the center, pinch the edges of the green dough to seal, and roll smooth. Finally, roll the red dough into an 8x7-inch rectangle. Place the green log in the center, pinch the edges of the red dough to seal, and roll until smooth. Wrap the assembled log in plastic wrap and refrigerate for 1 hour to firm up. (1 hour 45 minutes)

Preheat the oven to 350 degrees F (175 degrees C). Lightly grease or line baking sheets with parchment paper. (15 minutes)

Carefully cut the log in half lengthwise. Then, cut each half into 1/4-inch thick slices. Place the slices 1 inch apart on the prepared baking sheets. (10 minutes)

Bake in the preheated oven for 8 to 12 minutes, or until the edges are just beginning to turn golden. Be careful not to overbake, as this will dry out the cookies. Cool on the baking sheets for 1 minute before transferring them to wire racks to cool completely. (20 minutes)

Once cooled, pipe a small dollop of vanilla frosting on the bottom corner of each cookie to resemble a cloud. Sprinkle with yellow decorator sugar to add a touch of sunshine. Let stand until the frosting is set. (15 minutes)

For the best results, use gel food coloring, as it provides a more vibrant color without altering the consistency of the dough.
If the dough becomes too soft to work with, return it to the refrigerator for a few minutes to firm up.
Do not overbake the cookies! They should be slightly soft in the center when removed from the oven; they will continue to bake as they cool.
Store the cooled cookies in an airtight container at room temperature for up to 3 days.
