Follow The Directions

01

Step

Preheat oven to 350 degrees F (175 degrees C). Grease a casserole dish or two 9x5-inch loaf pans with shortening. (5 minutes)

02

Step

In a large bowl, whisk together the cake flour, pudding mix, cinnamon, baking soda, baking powder, salt, and nutmeg. (5 minutes)

03

Step

In a separate bowl, using an electric mixer, beat together the pumpkin puree, white sugar, softened butter, egg, and vanilla extract until smooth and well combined. (5 minutes)

04

Step

Gradually add the dry flour mixture to the wet pumpkin mixture, mixing on low speed until just combined. Be careful not to overmix. Stir in the chopped walnuts and miniature chocolate chips. (5 minutes)

05

Step

Spoon the batter into the prepared dish and sprinkle raw sugar evenly over the top. (2 minutes)

06

Step

Bake in the preheated oven until a toothpick inserted into the center comes out clean, approximately 45 to 55 minutes. (45-55 minutes)

For an even richer flavor, consider using brown butter instead of regular softened butter.
To enhance the nutty flavor, toast the walnuts lightly before chopping.
If you don't have raw sugar on hand, turbinado sugar or even granulated sugar will work as a substitute.
Store cooled bread in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to a week.
