Follow The Directions

01

Step

Preheat oven to 350 degrees F (175 degrees C). Lightly coat a large casserole dish or Dutch oven with cooking spray. (5 minutes)

02

Step

In a bowl, place Dijon mustard. In another bowl, combine brown sugar and flour. Coat each pork cube thoroughly with Dijon mustard, then dredge in the brown sugar-flour mixture, ensuring even coverage. (15 minutes)

03

Step

Heat olive oil in a large skillet over medium heat. Sear the coated pork cubes on all sides until browned, about 3 minutes per side. Transfer the browned pork to the prepared casserole dish, reserving the oil in the skillet. (20 minutes)

04

Step

In the same skillet, sauté the chopped onion and minced garlic until softened, approximately 5 minutes. Stir in the chicken broth, dry sherry, sweet potato cubes, black pepper, rosemary, thyme, and salt. Bring the mixture to a gentle boil. (10 minutes)

05

Step

Pour the sweet potato mixture over the pork in the casserole dish, ensuring the pork is submerged. Cover the dish securely. (5 minutes)

06

Step

Bake in the preheated oven for 50 minutes. Uncover the dish and continue baking until the pork is tender and no longer pink inside, and the sweet potatoes are easily pierced with a fork, about 20 minutes more. (70 minutes)

For a richer flavor, consider browning the pork in batches to avoid overcrowding the skillet.
If you prefer a thicker stew, whisk 1 tablespoon of cornstarch with 2 tablespoons of cold water and stir into the stew during the last 15 minutes of baking.
Serve this delightful stew with a side of crusty bread or fluffy rice to soak up the delicious sauce.
