For a deeper flavor, marinate the chicken in half of the pomegranate syrup for at least 2 hours before roasting. If you don't have fresh rosemary, 1/4 teaspoon of dried rosemary can be substituted. Be sure to let the chicken rest before carving; this allows the juices to redistribute, resulting in a more tender and flavorful bird.
