Follow The Directions

01

Step

Boil the Potatoes: Place the cubed potatoes in a large pot and cover with salted water. Bring to a boil over high heat, then reduce the heat to medium-low and simmer until the potatoes are slightly tender, about 5-6 minutes. Drain well.

02

Step

Sauté the Chorizo: In a large skillet over medium-high heat, cook the chorizo, breaking it up with a spoon until it's nicely browned and crumbly, about 5-6 minutes. Remove the chorizo from the skillet with a slotted spoon and set aside on a plate lined with paper towels, reserving about 1 tablespoon of the rendered chorizo fat in the skillet. Add vegetable oil if needed to make up 1 tablespoon.

03

Step

Sauté the Onions and Potatoes: Add the diced onion to the skillet with the chorizo fat and cook over medium heat, stirring occasionally, until softened and lightly browned, about 4-5 minutes. Add the drained potatoes to the skillet and sauté until they are lightly browned and slightly crispy, about 5-7 minutes.

04

Step

Combine and Season: Return the cooked chorizo to the skillet with the potatoes and onions. Stir to combine. Season generously with salt and freshly ground black pepper to taste. Serve hot.

For an extra layer of flavor, consider adding a pinch of smoked paprika or a dash of chili powder to the potatoes while sautéing.
Serve with your favorite toppings, such as a fried egg, crumbled Cotija cheese, fresh cilantro, a drizzle of hot sauce, and a side of creamy avocado for a complete and satisfying meal.
Feel free to adjust the amount of chorizo to suit your spice preference. For a milder flavor, use a sweet chorizo or a combination of chorizo and ground pork.
