Follow The Directions

Heat coconut oil on a griddle or in a large skillet over medium heat. (2 minutes)

Gently place the mahi mahi fillets on one side of the griddle, skin-side down if using. Cook until golden brown and the fish flakes easily with a fork, about 5-6 minutes per side, turning carefully halfway through. (12 minutes)

While the mahi mahi is cooking, add the spinach, mushrooms, garlic, and green onions to the other side of the griddle or skillet. Sauté until the spinach is wilted and the mushrooms are tender, about 5-7 minutes. (7 minutes)

Season the mahi mahi and vegetables with fresh basil, sea salt, and freshly ground black pepper to taste. (1 minute)

Serve the pan-fried mahi mahi and vegetable mixture immediately over a bed of hot cooked wild rice. Garnish with extra fresh basil, if desired. (1 minute)

For a richer flavor, consider adding a splash of dry white wine to the vegetables while they are sautéing.
If you don't have wild rice on hand, brown rice or quinoa also work well.
To ensure even cooking, pat the mahi mahi fillets dry with paper towels before searing.
Feel free to add other vegetables to the mix, such as bell peppers or zucchini.
