Step

Wash and sort the pinto beans, removing any debris. Place them in a large bowl, cover generously with cold water, and let soak for 6-8 hours, or preferably overnight. (5 minutes)

Drain and rinse the soaked beans thoroughly. Transfer them to the slow cooker. Add 8 cups of water, chopped onion, garlic powder, bay leaves, black pepper, and onion powder. Place the smoked turkey leg nestled amongst the beans. Cover the slow cooker. (10 minutes)

Cook on the Low setting for 6 hours. Check the beans, and if they appear to be drying out, add more water to maintain a consistent level of moisture. Stir in the olive oil. Continue to cook until the beans are exceptionally tender, approximately 2 hours more. (5 minutes)

Remove the turkey leg, shred or chop the meat, and return it to the slow cooker for a final stir before serving. (10 minutes)

Soaking the beans overnight significantly reduces cooking time and helps to remove some of the indigestible sugars that can cause digestive discomfort.
For a vegetarian variation, omit the smoked turkey leg and add 1 teaspoon of smoked paprika and a dash of liquid smoke to mimic the smoky flavor.
Adjust the amount of water during cooking to ensure the beans remain submerged and don't dry out. The final consistency should be creamy and slightly saucy.
Serve these flavorful beans over hot cooked rice, polenta, or with warm cornbread for a complete and satisfying meal.
