In a large skillet, add a drizzle of olive oil over high heat. Add the sausage and cook, breaking it up as it browns, for 5 to 7 minutes. Add the chopped peppers and cook until softened, about 5 minutes more. Remove from heat and let cool slightly. (15 minutes)

In a large bowl, whisk together the eggs, Parmesan cheese, hot sauce, salt, and pepper. Add the cooked sausage and peppers. (5 minutes)

Spray a 12-cup muffin tin with olive oil cooking spray. Pour the egg mixture into the muffin tin, filling each cup about three-quarters full. (5 minutes)

Bake in the preheated oven for 15 minutes. (15 minutes)

While the frittatas are baking, in another skillet, heat the remaining olive oil over medium-high heat. Add the chopped garlic, grated onion, and dried oregano, and cook, stirring, for 2 to 3 minutes, until fragrant. Add the crushed tomatoes and simmer to thicken slightly, about 10 minutes. (15 minutes)

Remove the mini frittatas from the oven. Top each with a spoonful of the tomato sauce and a sprinkle of shredded mozzarella cheese. Reserve the remaining sauce for serving. (5 minutes)

Continue baking for 5 minutes more, or until the cheese is melted and bubbly. Remove from oven and let cool slightly. Garnish with chopped parsley and torn basil leaves before serving. (5 minutes)

For a vegetarian option, substitute the sausage with mushrooms or zucchini.
Feel free to add other pizza toppings such as olives, pepperoni, or spinach.
These frittatas can be stored in the refrigerator for up to 3 days.
