Step

Preheat & Prep (15 minutes): Position oven rack in the lowest position and preheat the oven to 325 degrees F (165 degrees C). Place a roasting rack inside a shallow roasting pan. In a small bowl, combine the sage (or poultry seasoning), paprika, seasoned salt, garlic powder, black pepper, and nutmeg.

Season & Stuff (10 minutes): Pat the turkey dry with paper towels. Place the turkey breast-side up in the prepared roasting pan. Sprinkle about half of the seasoning mixture inside the cavity of the turkey. Stuff the cavity with the onion wedges and bay leaves. Brush the turkey breast with vegetable oil.

Coat & Cover (5 minutes): Spread and rub the remaining seasoning mixture evenly over the entire surface of the turkey, including under the skin where possible. Add 1/2 cup of water to the bottom of the roasting pan. Cover the turkey loosely with heavy-duty aluminum foil.

Roast & Baste (2 hours 30 minutes - 3 hours 30 minutes): Roast the turkey for 1 hour with the foil on. Remove the foil and continue to roast for an additional 2 to 2 ½ hours, or until the internal temperature reaches 165 degrees F (75 degrees C) in the thickest part of the thigh. Baste the turkey occasionally with the pan juices during this time.

Rest & Carve (20 minutes): Remove the turkey from the oven and let it rest for 20 minutes before carving. This allows the juices to redistribute, resulting in a more tender and flavorful bird. Transfer the turkey to a platter or carving board and carve. Reserve the pan juices to make gravy or serve as a flavorful jus with the turkey.

For extra crispy skin, consider increasing the oven temperature to 350 degrees F (175 degrees C) for the last 30-45 minutes of roasting, keeping a close eye to prevent burning.
If the turkey starts to brown too quickly, loosely tent it with foil again to prevent over-browning.
Use a meat thermometer to ensure accurate cooking. Insert the thermometer into the thickest part of the thigh, making sure not to touch the bone.
For a richer flavor, consider adding some chopped fresh herbs like rosemary or thyme to the seasoning blend.
Ensure your turkey is fully thawed before cooking to ensure even roasting.
