Follow The Directions

01

Step

In a medium saucepan, combine the sugar and lime zest. Toss together, ensuring the zest is well distributed throughout the sugar. Allow this mixture to sit for at least 1 hour, or up to 2 hours. (Time: 60-120 minutes)

02

Step

Add the cold water to the saucepan and place over medium-high heat. Stir continuously until the sugar is completely dissolved and the mixture is clear and steaming, but not boiling. Remove from heat and strain the lime syrup through a fine-mesh sieve into a heat-proof container. Discard the lime zest. Allow the syrup to cool completely to room temperature. (Time: 20 minutes)

03

Step

Once the syrup is cool, stir in the freshly squeezed lime juice, triple sec, and tequila. Mix well to combine. Refrigerate the mixture until it is thoroughly chilled. This will ensure a smoother sorbet. (Time: 2 hours)

04

Step

Pour the chilled mixture into your ice cream machine and churn according to the manufacturer's instructions. The sorbet should be a thick, icy consistency. (Time: 20-30 minutes)

05

Step

Transfer the churned sorbet into an airtight container and freeze for at least 4 hours, or preferably overnight, to allow it to fully harden. (Time: 240 minutes)

06

Step

To serve, rim your glasses with coarse sea salt. Scoop the sorbet into the prepared glasses and garnish with a lime wedge. For an extra kick, drizzle a small amount of tequila over each serving just before serving.

For a smoother texture, consider using a high-quality tequila.
Adjust the amount of tequila to your liking, but be mindful of the alcohol content.
If you don't have an ice cream machine, you can still make this sorbet! Pour the mixture into a shallow dish and freeze for 30 minutes. Then, use a fork to break up any ice crystals that have formed. Repeat this process every 30 minutes for 2-3 hours, or until the sorbet is a slushy consistency.
For a non-alcoholic version, simply omit the tequila and increase the lime juice by 1/4 cup.
