For the best flavor, use ripe but firm mangoes. Overripe mangoes will make the pico de gallo too mushy. If you don't have fresh jalapeños, you can use a pinch of red pepper flakes, but the flavor will be slightly different. This pico de gallo is best served the same day it is made, but it can be stored in the refrigerator for up to 24 hours.
