For an extra smooth custard, strain it through a fine-mesh sieve after cooking. Use fresh lemon juice for the best flavor; bottled juice can sometimes have a slightly bitter taste. If you don't have a double boiler, a heatproof glass bowl set over a saucepan of simmering water works just as well. The custard will thicken more as it cools, so don't worry if it seems a little thin when it's still hot.
