For a richer flavor, use a high-quality dashi stock. If you don't have sake, you can substitute it with a dry sherry or omit it altogether. Adjust the amount of sugar to your liking. Some prefer a sweeter Gyudon. Consider adding a beaten egg to the Gyudon just before serving for extra richness. Benishoga (pickled red ginger) is a traditional topping that adds a refreshing zing to the dish. Highly recommended!
