Step

In a large, heavy-bottomed pot or Dutch oven, melt the butter over medium-high heat. (2 minutes)

Add the linguica, onion, and bell peppers to the pot. Season with black pepper, basil, and oregano. Sauté, stirring occasionally, until the vegetables are softened and the linguica is lightly browned. (10-15 minutes)

Stir in the rinsed and drained cannellini beans. Cook, stirring occasionally, until the beans are heated through. (5 minutes)

Pour in the water and stir in the rinsed rice. Bring the mixture to a boil, then reduce the heat to low, cover the pot tightly, and simmer until the rice is tender and the liquid is completely absorbed. (20-25 minutes). If the rice is not cooked through and the pot is dry, add 1/4 cup of water at a time until it reaches the desired consistency.

Remove from heat and let stand, covered, for 10 minutes before fluffing with a fork and serving.

For a spicier dish, add a pinch of red pepper flakes or a dash of hot sauce to the pot along with the vegetables.
Feel free to substitute other types of beans, such as kidney beans or pinto beans, for the cannellini beans.
For a richer flavor, use chicken broth instead of water.
Garnish with fresh parsley or cilantro before serving.
