Follow The Directions

01

Step

Preheat the oven to 275 degrees F (135 degrees C). Line a baking sheet with heavy-duty aluminum foil. (5 minutes)

02

Step

In a small bowl, thoroughly combine the fennel seeds, black pepper, white sugar, garlic salt, kosher salt, and cayenne pepper to create the spice rub. (2 minutes)

03

Step

Place the rib racks on the prepared baking sheet. Using a sharp paring knife, make several shallow slits in the membranes along the backs of the ribs to help the flavors penetrate. Generously rub the spice mixture on both sides of the rib racks, ensuring even coverage. (10 minutes)

04

Step

Bake in the preheated oven for 1 1/2 hours. Carefully flip the ribs and continue baking until a fork easily inserts between the bones, approximately 1 to 1 1/2 hours more. Allow the ribs to cool completely, about 1 hour. (180 minutes)

05

Step

In a saucepan over medium heat, combine the brown sugar, orange juice, rice wine vinegar, orange zest, and hot chile paste. Bring the mixture to a boil, then reduce the heat to low and simmer until the glaze has reduced by half, about 5 minutes. (10 minutes)

06

Step

Preheat the oven to 425 degrees F (220 degrees C). Line a baking sheet with fresh aluminum foil. (5 minutes)

07

Step

Cut the rib racks into individual ribs. In a large bowl, toss the ribs with the prepared glaze until they are evenly coated. Place the glazed ribs on the prepared baking sheet, reserving any remaining glaze in the bowl for basting. (8 minutes)

08

Step

Bake in the preheated oven for 5 minutes. Flip the ribs, brush with the reserved glaze, and continue baking until they are beautifully browned, approximately 5 to 10 minutes more. (15 minutes)

For a deeper flavor, toast the fennel seeds lightly in a dry pan before grinding.
Adjust the amount of chile paste to your preference for heat.
The cooling process after the initial bake is crucial for tender ribs. Don't skip it!
Serve with extra glaze on the side for dipping.

I found the spice rub a bit too salty for my taste. Next time, I'll reduce the amount of salt.

The glaze is amazing! I even drizzled some over rice as a side dish.

  • Hobart Schulist

This recipe is a keeper! The ribs were fall-off-the-bone tender.
