In a multi-functional pressure cooker (such as an Instant Pot), combine the carrots, onion, celery, garlic, peppercorns, salt, thyme, and rosemary. (5 minutes)

Pour in the water, ensuring the vegetables are submerged. Close and lock the lid according to the manufacturer's instructions. (2 minutes)

Select high pressure and set the timer for 30 minutes. Allow approximately 25 minutes for the pressure to build. (25 minutes)

Once the cooking cycle is complete, allow the pressure to release naturally for about 30 minutes. (30 minutes)

Carefully unlock and remove the lid. Let the broth cool slightly for 20 minutes. (20 minutes)

Pour the broth through a fine-mesh strainer lined with cheesecloth (optional) to remove all solids. Discard the solids. (10 minutes)

Store the broth in the refrigerator for up to 5 days or freeze for up to 3 months.

Don't be afraid to add other vegetable scraps like leek tops, mushroom stems, or bell pepper cores for even more flavor.
For a richer, deeper flavor, roast the vegetables in the oven at 400°F (200°C) for 20 minutes before adding them to the Instant Pot.
If you don't have fresh herbs, you can substitute 1 teaspoon of dried thyme and 1/2 teaspoon of dried rosemary.
Adjust the salt to your liking. Remember that the broth will concentrate as it cooks.
