In a saucepan, bring 4 cups of water and rice to a boil. Reduce heat to medium-low, cover, and simmer until the rice is tender and the liquid is absorbed (approximately 20-25 minutes).

While the rice is cooking, place sausages and 1/2 cup of water in a large skillet over medium heat. Cover and cook until the sausages are heated through (about 5 minutes). Remove sausages and thinly slice.

Return the sliced sausages to the skillet. Add the sliced onion, bell pepper, and celery. Cook over medium heat until the vegetables begin to soften (approximately 5 minutes).

Stir in the quartered tomatoes, beef broth, cubed pineapple, brown sugar, garlic powder, and black pepper. Cook and stir until the sugar has dissolved and the mixture comes to a simmer.

In a small bowl, whisk together the reserved pineapple juice and cornstarch until smooth. Stir this mixture into the sausage mixture. Cook until the sauce thickens (about 2 minutes).

Serve the sausage and vegetable mixture over the prepared rice. Enjoy!

For an extra layer of flavor, try grilling the sausage before slicing.
If you prefer a spicier dish, add a pinch of red pepper flakes to the sausage mixture.
Jasmine rice or brown rice can be substituted for white rice based on preference.
