For a spicier chile verde, leave some of the seeds in the chiles. If you don't have access to fresh Hatch chiles, you can substitute with other varieties of green chiles, such as Anaheim or poblano, but the flavor will be different. Adjust the amount of chicken broth to achieve your desired sauce consistency. If the sauce becomes too thick, add more broth. If it's too thin, simmer uncovered for a longer time to reduce it. Serve with warm tortillas, rice, beans, and your favorite toppings, such as chopped cilantro, onions, and a squeeze of lime.
