Step
In a large stockpot, place the chicken pieces and add enough water to cover completely. Add the onion, celery, basil, parsley, bouillon, garlic, salt, and pepper. Bring to a simmer over medium-high heat. (5 minutes)

Reduce the heat to low and simmer gently until the chicken is no longer pink at the bone and the juices run clear, about 1 hour. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C). (60 minutes)

While the chicken is simmering, prepare the vegetables. Peel and dice the potatoes, kohlrabi, and turnip. Peel and slice the carrots. Place these vegetables in a bowl. Core and chop the cabbage and tomato. Trim the green beans and cut them into 1-inch pieces. Cut the corn kernels from the cobs. Place these vegetables in a separate bowl. (20 minutes)

Once the chicken is cooked, remove and discard the celery chunks. Transfer the chicken to a cutting board and let it cool for 5 minutes. Remove the meat from the bones and chop it roughly. Return the chopped chicken meat to the stockpot. (10 minutes)

Stir in the first bowl of vegetables (potatoes, kohlrabi, turnip, and carrots) into the stockpot. Cook over medium-low heat until the vegetables are tender, about 20 minutes. (20 minutes)

Add the second bowl of vegetables (cabbage, tomato, green beans, and corn) to the soup. Cook until the green beans are tender, about 7 to 10 minutes more. (10 minutes)
For an even richer flavor, use homemade chicken stock instead of water and bouillon.
Feel free to adjust the vegetables based on your preferences and what's in season. Other great additions include zucchini, squash, and spinach.
Simmering the soup for a longer period will intensify the flavors. You can easily let it simmer for up to 2 hours.
If you like a thicker soup, you can mash some of the potatoes against the side of the pot.
