Heat the olive oil in a large skillet over medium-high heat. (1 minute)

Add the chopped onion, minced garlic, salt, and pepper to the skillet. Sauté until the onion is softened and lightly golden, about 5 minutes. Be careful not to burn the garlic.

Add the shrimp to the skillet and sauté until they turn bright pink and are cooked through, about 2-3 minutes per side, depending on the size of the shrimp. Avoid overcrowding the pan for even cooking.

Season with additional salt and pepper to taste. Stir in the fresh cilantro and lime juice, tossing to coat the shrimp evenly. (1 minute)

Serve immediately, garnished with extra cilantro and lime wedges, if desired.

For best results, use fresh, high-quality shrimp. If using frozen shrimp, thaw completely and pat dry before cooking.
Don't overcook the shrimp, as they will become rubbery. They are done when they are pink and opaque.
Adjust the amount of lime juice and cilantro to your liking. A pinch of red pepper flakes can add a nice touch of heat.
Serve over rice, quinoa, or pasta, or enjoy on its own with a side of crusty bread for soaking up the delicious sauce.
