Step

Heat olive oil in a large skillet over medium heat. Add onion and cook until translucent, about 5 minutes. Add mushrooms and garlic; cook until softened, about 2 minutes. Add yam and cook for 2 minutes.

Stir in cumin, coriander, nigella seeds, black mustard seeds, chile powder, paprika, and turmeric. Cook until fragrant, about 2 minutes. Add cauliflower, chickpeas, salt, and pepper; stir until combined.

In a small bowl, whisk together vegetable stock and tomato paste. Pour into skillet. Cover and cook until yam is tender, about 15 minutes. Stir in spinach, parsley, lemon juice, and lime juice and cook until spinach wilts, about 1 minute.

For a richer flavor, try roasting the yam and cauliflower before adding them to the hash.
Adjust the amount of chile powder to your spice preference.
Serve with a dollop of tahini or a sprinkle of feta cheese for added flavor.
Nigella seeds are also known as onion seeds.
