Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 9-inch pie plate with non-stick cooking spray. (5 minutes)

Melt 3 tablespoons of butter in a large skillet over medium heat. Add the sliced mushrooms and chopped onion, stirring occasionally, until the mushrooms have released their liquid and it has mostly evaporated, about 10 minutes. Stir in the lemon juice and dried thyme and simmer for an additional 2 minutes to allow the flavors to meld. (12 minutes)

In a separate saucepan, melt the remaining 3 tablespoons of butter. Whisk in the flour and cook, stirring constantly, for about 1 minute to create a roux. Gradually whisk in the chicken broth, Marsala wine, and half-and-half until the sauce is smooth and thickened, about 3 minutes. The sauce should be quite thick. Season generously with salt and pepper to taste. (4 minutes)

Transfer the cooked mushroom mixture to the saucepan with the broth/Marsala sauce; stir well to combine everything evenly. (2 minutes)

On a lightly floured surface, roll out one sheet of puff pastry to a size slightly larger than the pie plate. Carefully press the pastry evenly into the bottom and up the sides of the pie plate; trim any excess pastry. Spoon the mushroom mixture into the prepared pastry shell. (8 minutes)

Roll out the second sheet of puff pastry to a size slightly larger than the pie plate. Place it on top of the mushroom filling. Trim any excess pastry, and crimp the edges to seal the pie. Cut a few slits in the top of the pie to allow steam to escape during baking. Brush the top of the pie evenly with the beaten egg to create a golden-brown crust. (10 minutes)

Bake in the preheated oven until the puff pastry is golden brown and the mushroom mixture is bubbly, about 40 minutes. Allow the pie to cool slightly on a wire rack before slicing and serving. (45 minutes)

For a richer flavor, consider adding a tablespoon of sherry or Madeira wine to the mushroom mixture.
If you don't have Marsala wine, you can substitute with a dry sherry or a fortified wine.
To prevent the bottom crust from becoming soggy, you can blind-bake the bottom crust for 10-15 minutes before adding the mushroom filling.
Garnish with fresh parsley or thyme sprigs for an elegant presentation.
