Remove the salmon strips from the marinade, allowing any excess to drip off. Arrange the strips in a single layer on the wire rack, ensuring they are not touching. (15 minutes)

Place the baking sheet in the preheated oven and dehydrate the salmon for approximately 8 hours, or until it reaches your desired level of dryness. The jerky should be firm but still slightly pliable. (8 hours)

For a smoky flavor, add a teaspoon of smoked paprika to the marinade.
If you prefer a spicier jerky, add a pinch of red pepper flakes to the marinade.
The drying time may vary depending on the thickness of the salmon strips and your oven. Check the jerky periodically after 6 hours to ensure it doesn't become too dry.
Store the cooled salmon jerky in an airtight container in the refrigerator for up to 2 weeks.
