Step

Prepare the Chicken (10 minutes): Rinse the chicken thoroughly and pat it dry with paper towels. Trim any excess fat, but leave the skin on. Carefully lift the skin from the breast and thigh areas to create pockets.

Infuse with Aromatics (5 minutes): Slide bay leaves under the skin in the breast and thigh pockets. Generously coat the entire chicken, inside and out, with poultry seasoning.

Prepare the Beer Infusion (2 minutes): Drink (or discard) about half of the beer from the can. Pour the liquid smoke flavoring into the remaining beer. Carefully raise the tab on the beer can until it is standing straight up.

Assemble the Chicken (5 minutes): Gently insert the beer can into the cavity of the chicken from the bottom, ensuring it's securely in place and the can is roughly even with the bottom of the chicken. Insert a long metal skewer through one wing, then through the ribs, the beer can tab, and out the opposite side. This helps to stabilize the chicken and prevent the can from tipping.

Prepare the Grill (10 minutes): Preheat your grill by lighting the coals. Arrange the coals in a ring around the outside edge of the grill, creating an indirect heat zone in the center.

Grill the Chicken (2 hours): Carefully place the chicken in the center of the grill, standing it upright on the beer can. Close the grill lid and cook for approximately 2 hours, or until a meat thermometer inserted into the thickest part of the thigh registers at least 165 degrees F (74 degrees C).

Rest and Serve (20 minutes): Once cooked, carefully remove the chicken from the grill, being cautious not to spill the contents of the beer can. Remove the skewer and beer can. Let the chicken rest for at least 15 minutes before carving and serving.

For an extra layer of flavor, consider adding a tablespoon of your favorite dry rub to the poultry seasoning.
You can also add minced garlic, chopped herbs (like rosemary or thyme), or a squeeze of lemon juice to the beer can for additional flavor infusions.
Ensure the grill temperature remains consistent throughout the cooking process. Adjust the vents as needed to maintain a steady temperature.
If you don't have a grill, you can also cook this in the oven. Preheat your oven to 350 degrees F (175 degrees C) and place the chicken on a baking sheet. Bake for the same amount of time, or until the internal temperature reaches 165 degrees F (74 degrees C).
