Rinse quinoa thoroughly under cold water to remove any bitterness. Drain well. (5 minutes)

In a saucepan, bring chicken broth to a simmer over medium heat. Keep warm. (10 minutes)

In a large saucepan or Dutch oven, melt 2 tablespoons of butter over medium-high heat. Add chopped onion and cook until softened and translucent, about 5 minutes. Add minced garlic and cook for another minute until fragrant. (6 minutes)

Stir in the rinsed quinoa and cook, stirring constantly, until the grains are lightly toasted and coated with butter, about 3 minutes. (3 minutes)

Pour in the white wine, scraping up any browned bits from the bottom of the pan. Cook, stirring, until the wine is almost completely absorbed, about 5 minutes. (5 minutes)

Begin adding the warm chicken broth, 1/2 cup at a time, stirring constantly. Wait until each addition of broth is absorbed before adding the next. Continue this process until the quinoa is tender, creamy, and has a slightly thickened consistency. This should take about 20-25 minutes, and you may not need all the broth. (25 minutes)

Stir in the remaining 1 tablespoon of butter, Parmesan cheese, and heavy cream. Season with marjoram, thyme, salt, and pepper to taste. (3 minutes)

Serve immediately, garnished with extra Parmesan cheese and a drizzle of olive oil, if desired.

For a vegetarian version, substitute vegetable broth for chicken broth.
Feel free to add other vegetables such as mushrooms, asparagus, or spinach during the last few minutes of cooking.
For a richer flavor, use homemade chicken broth.
The key to creamy risotto is constant stirring! Don't skip this step.
