For a smokier flavor, roast the peppers on a grill instead of broiling them. If you can't find Hatch chiles, Anaheim peppers are a good substitute. Adjust the amount of chili powder to your preferred level of spiciness. For a thicker chili, you can blend a cup of the finished chili and stir it back into the pot. This chili tastes even better the next day, so it's perfect for making ahead of time.
