In a large soup pot or Dutch oven, cook the diced bacon over medium heat until crisp and golden brown (approximately 8-10 minutes). Remove the bacon with a slotted spoon and set aside, leaving the rendered bacon fat in the pot.

Add the diced onion and red bell pepper to the pot with the bacon fat. Cook and stir until softened, about 5 minutes. Season with salt and pepper. Stir in the minced garlic and seafood seasoning. Continue to cook and stir for an additional 2 minutes, allowing the garlic to become fragrant.

Pour in the chicken broth, then add the cubed red potatoes and corn kernels. Add water if needed to ensure the vegetables are just covered. Bring the mixture to a boil, then reduce the heat to low. Simmer gently until the potatoes are tender, about 15-20 minutes.

Stir in the milk and butter until the butter is completely melted and incorporated into the broth. Add the reserved crispy bacon, stirring to combine. Gently bring the soup just to a simmer (do not boil). Add the cod pieces and chopped parsley. Cook, stirring occasionally, until the cod is cooked through and flakes easily with a fork, about 5-8 minutes.

For a richer chowder, substitute half-and-half or heavy cream for the milk.
Feel free to add other seafood, such as shrimp or clams, along with the cod.
A pinch of cayenne pepper can add a subtle kick to the chowder.
Garnish with extra parsley and a drizzle of olive oil before serving.
