Preheat the oven to 350 degrees F (175 degrees C).

In a heavy-bottomed saucepan, melt the sugar over medium-low heat, stirring constantly with a wooden spoon until it transforms into a smooth, golden caramel. (Approximately 10 minutes)

Carefully pour the hot caramel into a 9-inch round, 3-inch deep baking dish, swirling to coat the bottom and sides. Allow the caramel to cool and harden.

In a blender, combine the eggs, softened cream cheese, and sweetened condensed milk. Blend on high speed until completely smooth and creamy. Transfer the mixture to a large mixing bowl.

Add the cream of coconut, coconut milk, evaporated milk, coconut rum, and vanilla extract to the blender. Blend until well combined, then pour this mixture into the bowl with the cream cheese mixture.

Whisk all ingredients together until the flan batter is homogeneous and lump-free. Gently pour the mixture into the caramel-lined baking dish.

Prepare a water bath by lining a large roasting pan with a damp kitchen towel. Place the baking dish containing the flan on top of the towel inside the roasting pan. Carefully pour boiling water into the roasting pan until it reaches halfway up the sides of the baking dish.

Bake in the preheated oven until the flan is set but still slightly jiggly in the center. A knife inserted near the center should come out clean. (Approximately 1 hour)

Remove the roasting pan from the oven and carefully transfer the baking dish to a wire rack to cool completely. Once cooled, refrigerate the flan for at least 4 hours, or preferably overnight, to allow it to fully set.

To serve, run a thin knife around the edge of the pan to loosen the flan. Invert the flan onto a serving platter. Spoon any remaining caramel from the baking dish over the top of the flan. Slice and serve chilled.

For an extra smooth flan, strain the mixture through a fine-mesh sieve before pouring it into the baking dish.
Be careful when working with hot caramel, as it can cause severe burns. Use oven mitts and work slowly.
The damp kitchen towel in the water bath helps to regulate the temperature and prevent the flan from cracking.
If the flan is browning too quickly during baking, tent it loosely with aluminum foil.
For a richer flavor, use full-fat cream cheese and coconut milk.
