For an even richer flavor, use bone-in, skin-on chicken thighs. Sear them well before simmering, and then shred the meat off the bone after cooking. Add a splash of dry sherry or white wine to the stew while it simmers for extra depth of flavor. Fresh herbs, such as thyme or parsley, make a lovely garnish. Feel free to substitute other vegetables, like peas or green beans, for the corn.
