For a smoother soup, use an immersion blender to puree after the potatoes are tender, before adding the cheese and cream. Adjust the amount of chicken stock to achieve your desired soup consistency. Add more for a thinner soup, less for a thicker one. Feel free to experiment with different cheeses! Sharp cheddar or Gruyere would also be delicious. If you don’t have fresh chives, dried chives or even a sprinkle of fresh parsley will work as a garnish.
