Place the celeriac cubes in a large pot and cover with salted water. Bring to a boil over high heat, then reduce the heat to medium-low, cover, and simmer for 12 minutes.

Add the potato pieces to the pot and continue to simmer until both the celeriac and potatoes are very tender, about 15 minutes more. Drain the vegetables thoroughly and allow them to steam dry in the pot for 1 to 2 minutes.

Return the drained vegetables to the pot and stir over medium-high heat until any remaining liquid has evaporated and the vegetables appear dry, about 2 minutes. Remove from heat.

Add the heavy cream and butter to the pot. Mash with a potato masher or use a ricer for an ultra-smooth texture, until the mash is almost completely smooth and creamy, about 3 minutes.

For a richer flavor, consider browning the butter before adding it to the mash. The nutty notes will complement the celeriac beautifully.
To lighten the dish, substitute half-and-half or milk for the heavy cream and reduce the butter to 1-2 tablespoons. You can also add a tablespoon of olive oil for extra flavor.
A pinch of nutmeg or white pepper adds a subtle warmth to the mash.
