For a richer flavor, brown the butter in a saucepan before dotting it over the cauliflower. Feel free to experiment with different cheeses. A combination of Parmesan and Gruyere would be delicious. If you don’t have lemon pepper panko, regular panko bread crumbs can be used with a zest of one lemon and a generous crack of black pepper.
