In a medium saucepan, combine the tomatillos, tomatoes, serrano peppers, chile de arbol peppers, and 3 whole garlic cloves. Cook over medium-low heat until the mixture is juicy and the peppers are tender. (Approximately 10 minutes). Remove and discard the garlic cloves.

Carefully pour the mixture into a blender and blend until smooth. (Approximately 1 minute). Mince 1 garlic clove and stir it into the sauce. Season with salt to taste and set aside.

Mince the remaining garlic clove and place it in a skillet. Add the pork, cover the skillet, and cook over medium heat, stirring occasionally, until the pork is no longer pink and the juices run clear. (Approximately 30 minutes).

Pour the blended tomatillo sauce into the skillet with the pork. Reduce the heat to low and simmer, stirring often, until the pork is tender. (Approximately 5-10 minutes). Ensure an instant-read thermometer inserted into the pork reads at least 145 degrees F (63 degrees C).

For a milder flavor, remove the seeds and membranes from the serrano and chile de arbol peppers before chopping.
If you prefer a thicker sauce, simmer it uncovered for a few minutes longer to reduce the liquid.
Serve this Carne con Chile with warm tortillas, rice, or your favorite Mexican side dishes.
