Follow The Directions

01

Step

In a large bowl, whisk together the eggs, sour cream, milk, salt, and pepper until well combined. Set aside. (5 minutes)

02

Step

In a separate, extra-large bowl, combine the thawed hash browns, diced ham, shredded Cheddar cheese, chopped green onions, and diced bell peppers. Toss gently to distribute the ingredients evenly. (10 minutes)

03

Step

Transfer the hash brown mixture to a greased 9x13-inch baking dish. Pour the egg mixture over the hash brown mixture, ensuring it's evenly distributed. The mixture may appear slightly watery at this stage, but the hash browns will absorb most of the liquid overnight. (5 minutes)

04

Step

Cover the baking dish tightly with plastic wrap and refrigerate for at least 8 hours, or preferably overnight. (8+ hours)

05

Step

The next morning, preheat the oven to 400 degrees F (200 degrees C). (10 minutes)

06

Step

Remove the plastic wrap from the baking dish and bake in the preheated oven for approximately 55 minutes, or until the top is golden brown and the eggs are set. A knife inserted into the center should come out clean. (55 minutes)

07

Step

Let the casserole cool for a few minutes before slicing and serving. Enjoy!

For a spicier kick, add a pinch of cayenne pepper or a dash of hot sauce to the egg mixture.
Feel free to substitute other cheeses, such as Monterey Jack or Gruyere, for the Cheddar cheese.
For a vegetarian option, omit the ham and add sautéed mushrooms, spinach, or other vegetables of your choice.
If you don't have time to thaw the hash browns, you can use them frozen, but you may need to add a few extra minutes to the baking time.
To prevent the top from browning too quickly, you can tent the casserole with foil during the last 15-20 minutes of baking.
