For an extra layer of flavor, consider adding a packet of taco seasoning to the ground beef while it's cooking. Feel free to experiment with different types of cheese. Monterey Jack or Colby Jack would also be delicious. If you prefer a spicier dish, use the hot version of Ro*Tel® diced tomatoes or add a pinch of cayenne pepper to the beef mixture.
