Stir in the ketchup, starting with a smaller amount and adjusting to achieve your desired color and slight tang. Season generously with salt and freshly ground black pepper to taste. (2 minutes)

For a vegetarian option, omit the ham and consider adding smoked paprika for a smoky flavor.
Feel free to experiment with other vegetables such as celery, potatoes, or diced tomatoes.
A ham hock can be substituted for diced ham for a richer, more intense flavor.
This soup freezes well. Allow to cool completely before transferring to airtight containers or freezer bags.
