Place pork roast in a slow cooker; season generously with garlic powder, poultry seasoning, salt, and black pepper. Add chicken broth, 3 stalks of celery, quartered onion, and quartered apple. (5 minutes)

Cover the slow cooker. Cook on Low until the pork is incredibly tender and easily shreds with a fork, approximately 8 hours. Transfer the pork roast to a large platter. Discard the cooking liquid and vegetables. Shred the pork with two forks and return it to the slow cooker. (8 hours)

While the pork is cooking, prepare the barbecue sauce. In a large saucepan, melt the butter over medium heat. Add the chopped celery and chopped onion; cook until the onion becomes translucent, about 5 minutes. Stir in the ketchup, water, cider vinegar, brown sugar, Worcestershire sauce, prepared mustard, liquid smoke, and garlic powder. Reduce heat to low and simmer, stirring occasionally, until the sauce has thickened and the flavors have melded, about 10 minutes. Pour the barbecue sauce over the shredded pork in the slow cooker. (15 minutes)

Cover the slow cooker and cook on Low for an additional 2 hours, allowing the pork to fully absorb the flavors of the barbecue sauce. Serve hot on buns, over rice, or as desired. (2 hours)

For an extra depth of flavor, sear the pork loin roast in a hot skillet before placing it in the slow cooker.
Adjust the amount of liquid smoke to your preference; a little goes a long way!
If you prefer a spicier BBQ, add a pinch of cayenne pepper or a dash of hot sauce to the sauce.
The pulled pork can be made a day in advance and reheated; the flavors will only intensify overnight.
