Follow The Directions

01

Step
20 mins

Prepare the Sugar Syrup: In a medium saucepan, combine water and sugar. Bring to a boil over medium-high heat, stirring until the sugar dissolves completely. Reduce heat to low and simmer gently until the syrup reduces to 1 cup, approximately 10 minutes. Remove from heat and allow to cool completely. (Time: 20 minutes)

02

Step
5 mins

Create the Avocado Base: In a mixing bowl, mash the peeled and pitted avocados to your desired consistency, ranging from smooth to slightly chunky. Add the evaporated milk, 1% milk, and fresh lime juice. Stir until well combined. (Time: 5 minutes)

03

Step
4 hrs

Combine and Chill: Gradually incorporate the cooled sugar syrup into the avocado mixture, stirring until fully combined. Cover the bowl and chill the mixture in the refrigerator for at least 4 hours, or preferably overnight, to allow the flavors to meld. (Time: 4 hours +)

04

Step
1 hrs

Churn and Freeze: Pour the chilled avocado mixture into your ice cream maker and churn according to the manufacturer's instructions. Once churned to a soft-serve consistency, transfer the ice cream to a lidded container. Freeze for at least 1 hour, or until firm enough to scoop. (Time: 1 hour +)

For a richer flavor, consider using full-fat milk or adding a splash of heavy cream to the avocado base.
Taste and adjust the lime juice according to your preference. A little extra lime can brighten the flavor.
If you don't have an ice cream maker, you can still make this! Pour the chilled mixture into a freezer-safe container and freeze for about 4 hours, stirring every 30 minutes to prevent ice crystals from forming. This method will result in a slightly less smooth texture.

The lime juice really makes the flavor pop. I added a little zest too!

I found that letting the mixture chill overnight is essential for the best flavor.
