In a separate bowl, combine the granulated sugar, brown sugar, cinnamon, nutmeg, cloves, and salt. Sprinkle this mixture evenly over the apples in the slow cooker. Add the water, ensuring the apples are just slightly moistened. (5 minutes)

Cover the slow cooker and cook on LOW for 10 hours, or overnight. The apples should be very soft and easily mashed. (10 hours)

Stir in the vanilla extract. Remove the lid from the slow cooker and continue to cook on LOW for an additional 2 hours, allowing the apple butter to thicken to your desired consistency, stirring occasionally. (2 hours)

For a smoother apple butter, use an immersion blender to puree the mixture after the initial 10 hours of cooking. Be careful, as the mixture will be hot!
Adjust the spices to your preference. If you prefer a stronger cinnamon flavor, add an extra ½ teaspoon.
To test for doneness, place a spoonful of apple butter on a chilled plate. If it doesn't spread rapidly and the liquid doesn't separate, it's ready.
This apple butter can be stored in airtight containers in the refrigerator for up to 2 weeks, or frozen for longer storage.
