In a small bowl, whisk together all-purpose flour, tapioca flour, Cajun seasoning, garlic salt, honey powder, paprika, and cayenne pepper. Remove chicken thighs from the buttermilk mixture and shake off any excess liquid. Discard the buttermilk mixture. Dredge each thigh in the flour mixture, ensuring both sides are fully coated. Shake off any excess flour and place the coated thighs on a plate. (10 minutes)

Preheat your air fryer to 360 degrees F (175 degrees C) according to the manufacturer's instructions. (5 minutes)

Carefully place the chicken thighs into the air fryer basket, making sure they are not stacked on top of each other. Cook for 15 minutes. (15 minutes)

Flip the thighs and continue cooking until they are no longer pink in the center and the juices run clear. This should take approximately 10 more minutes. An instant-read thermometer inserted into the thickest part of the thigh should read at least 165 degrees F (74 degrees C). (10 minutes)

Remove the chicken thighs from the air fryer and drizzle each thigh with 1 teaspoon of honey before serving. (2 minutes)

For a deeper flavor, marinate the chicken thighs for up to 4 hours.
Adjust the amount of cayenne pepper to suit your spice preference.
If you don't have honey powder, you can omit it or substitute it with a pinch of brown sugar.
Ensure the chicken thighs are not overcrowded in the air fryer to achieve optimal crispiness. Cook in batches if necessary.
